Looking for a healthy alternative to takeout pizza, without the fuss of making a crust? This mini zucchini pizza bites recipe should do the trick! It has all the flavors you love in pizza, baked on nutritious slices of zucchini.
Fathead pizza, cheese crust pizza, or even zucchini pizza crust are great and all, but making the crust does take some effort. These mini keto pizza bites are ready in just 20 minutes, with much less work. They’re very similar to eggplant pizzas and portobello mushroom pizza, but smaller.
Top keto pizza bites with sauce, cheese, Italian seasoning, and pepperoni or your favorite pizza toppings. They make a great snack, appetizer, or light lunch that everyone will love. With classic pizza flavors, even those that aren’t big fans of low carb eating or vegetables will enjoy these. They were approved by my carb-loving kids and parents!
How To Make Zucchini Pizza Bites
This is the best zucchini pizza bites recipe for many reasons! It tastes delicious, is packed with veggies, AND takes just 20 minutes to make. Here’s how we make them:
- Roast zucchini rounds. Arrange zucchini slices in a single layer on a prepared baking sheet. Spray with avocado oil spray and sprinkle with salt and pepper. Bake until just crisp-tender, about 5 minutes.
- Top your mini zucchini pizzas. Top each slice with marinara sauce…
Followed by mozzarella cheese, Italian seasoning, and pepperoni quarter slices.
- Bake. Bake your mini pizza bites for about 8-10 minutes, until cheese is melted and zucchini is soft. Broil for 1-2 minutes to brown cheese. Serve immediately!
