Jello is so much fun to work with. I’ve made many fun desserts with it. This Rainbow Jello Poke Cake is right up there with my favorites. In honor of the up-and-coming St. Patrick’s Day, I turned a basic Poke Cake Recipe into a Rainbow Cake. Not only is it perfect for St. Patrick’s Day, but it would also make the perfect addition to any kid’s birthday party or rainbow celebration. Rainbow Jell-O Poke Cake

I added a little gold sprinkle to the whipped topping cloud. I’m calling it “The End of the Rainbow” Jello Poke Cake.

You can easily change this Poke Cake Dessert into any color you like. Just change the Jello Color to your them or whatever you happen to have in the pantry, and that’s that. It’s so simple to transform.

Equipment
Candy Squeeze bottles – 1 per jello
Ingredients
- 1 Package of White Cake Mix plus ingredients from the back of the box
- Assorted Jellos 3 oz. – For a rainbowpoke cake, I used red, orange, yellow, green, blue, & purple
- 1 cup hot water per jello color
- 1 16 oz. heavy whipping cream
- 2 Tbsp. powdered sugar
- 1 3 oz. instant vanilla pudding
- 1 cup milk very cold
- Sprinkles – I used gold for my rainbow poke cake. Use whatever goes with your theme
Instructions
Using a greased 9×13 baking dish, prepare, and bake the white cake mix according to the back of the box
Let it cool for at least an hour
Poke several holes in the cake using a straw, wooden skewer or fork

To achieve a rainbow in each slice…I spaced mine very close together – about 1/2 inch apart
Prepare each color of jello separately:
Open a jello package and pourhalf of the package into a squeeze bottle
Add about 1 cup of hot water to dissolve the jello. Close the cap on the bottle, and carefully – over the sink – swirl the liquid around until I the jello is dissolved
If using several colors, asI did – Squeeze the jello into only some of the holes you have poked in the cake
Follow with the other jello colors, using the same procedure – filling up every hole that you have poked into the cake
*If using only one color – finish up by pouring the other half of your jello powder into your squeeze bottle once it is empty and fill it up again. Finish squeezing the dissolved color into the poked holes
You will most likely have some jello from each color left over
Cover the cake and place it in the refrigerator so jello can set up
Whipped Topping:
Using a mixer – Whip the whipping cream and powdered sugar until soft peaks form
Pour the instant vanilla into a separate bowl, and add the cold milk
Mix together, and let set up
Fold the vanilla pudding into the whipped cream
Spread on cake
Add sprinkles
Cover and refrigerate until serving

*If you do not have squeeze bottles than you can pour the jello liquid from a spouted cup or bowl
